While not the ORIGINAL game music (though that's pretty awesome on it's own right), Touhou gets some amazing remixes. The vocal and piano versions of Bad Apple are by far my favorite. (And has the most amazing hand-animated video!)

The Corner of Memories - Persona 4
Never More - Persona 4

Kimi ga Iru Kara - Final Fantasy XIII. This one I've been listening to almost nonstop(in fact, with the entire album from the singer, Sayuri Sugawara) for weeks. Absolutely beautiful.

I absolutely adore the soundtracks from Jets n Guns and Einhander. Very well done techno/electronic sort of stuff, and the Jets'n'Guns soundtrack has a lot of rock/metal influences (mainly because it was done by Machinae Supremacy)

Jets'n'Guns OST - Death From Above

Jets'n'Guns OST - Flight of the Toyota

Einhander - Badlands

Einhander - Thermosphere

I also greatly enjoy the soundtracks from the Shin Megami Tensei games, especially Nocturne and the recent Persona games.
