I'm probably asking for head-breaking here, BUT... I'm gonna do it anyways.
I've got this Pally. I've been leveling her Prot, because the survivability is insane, but once I get to 80 and start doing serious stuff, I don't want to tank it. So, once the dual-spec comes out, I'm going Holy on the second one and will be a healy sort.
However, I've never done any serious healing in instances.
So... to all the Holy Pallies out there who are all awesome and stuff... could you offer me your insight and advice? ^_^
Namely on: Gear, Talent Build and Add-ons... and anything else you think I should know. (I have some general ideas on this stuff after spying on people in Armory, but am opening the floor up on it.)

I'm curious about this too, since I'll be leveling a Paladin in the fairly near future.
I understand that a Holy Paladin's strength is single-target healing (i.e. the tank) but the biggest weakness is trouble with mana conservation. Is that correct?

I'm not a Holydin as often as Prot or Ret, so a few of my details may be off, but I am a Disciple of MacMoran. This allows me to give you a basic gist.
Stats, in more or less this order:
You like Int. A lot. It makes your mana regen go up via Divine Plea and Replenishment. It makes your crit go up, and 20% of it also becomes spell power. It is a disgustingly efficient stat. You like int.
You like spell power. Big numbers. Next.
You like crit. You'll have a lot of it, especially on Flash of Light used with Sacred Shield. Holy is built around crits. Illumination makes them return mana, and Infusion of Light makes critical Holy Shocks give you instant FoL's. Instant FoL's are good.
You like haste. Even with Beacon of Light and the AoE glyph for Holy Light, pallies still find themselves in trouble when lots of people are taking damage all at the same time. The lower you can get that GCD and the faster you can fire your spells off, the better! You get a lot of free haste anyway, with Light's Grace knocking .5 seconds off Holy Light and Judgements of the Pure giving you a whopping free 15%, so it's not bad to build on that.
You sorta like mana/5. It makes your mana go up, but that's all it does. It's not affected by any percentages anywhere in anything. Int is a much more efficient method of mana regen.
Gems and enchants follow the same rules. My favorite gems are pure +int for yellow ("Brilliant"), +int/sp for red ("Luminous"), and +int/mana5 for blue ("Dazzling").
Talents:
For a big numbers PvE build you'll probably want something like this. I variate a little from most people by putting points in Pursuit of Justice instead of Improved Judgements, and a point in Aura Mastery instead of 2/2 Improved Lay on Hands. Aura Mastery in its current form sucks as a talent - a lot - but I tend to stand far away from people so the extra 10 yards is helpful to them. Pursuit of Justice is just a preference thing; it goes into all of my builds. Back in Holy again, another alternative in the Aura Mastery/Improved Blessing of Wisdom/Improved Lay on Hands area of the tree is to put points in Improved Concentration Aura instead. Since practically everything in BC had some kind of stun or interrupt, this wasn't a bad talent back then, but these days I think it's more of a PvP talent. Something else you can do is only put points in ret up to 5/5 Conviction, and use the spare 5 to be a buff-slave and pick up Kings. Group members might appreciate this if you're the only paladin, but if you're running with a ret pally you just wasted 5 points.
Addons:
I haven't been able to get Pally Power to work since pre-3.0, but if you can figure it out it's a lot of help with managing your blessings. Also, if you figure it out, tell me how because I miss it!
Grid is a headache to set up, but once you get it wrangled it's the best thing since ever. The reason it's a headache to set up is that it's infinitely customizable. There are a lot of guides to configuring it out there. This is the one I used; a little out of date, but still very helpful.

- Glyph of Holy Light: Gives 10% of Holy Light's healing to up to 5 extra targets within 8 yards of the initial target. IE, if you land a 10k Holy Light on the tank and there are five rogues around him, they'll all get 1k healing themselves. This is as close to an AoE heal as we get.
- Glyph of Flash of Light: 5% extra crit chance for FoL. Yes. Next.
- Glyph of Seal of Light OR Glyph of Seal of Wisdom: Makes these seals grant +5% healing to everything or -5% mana cost on everything, respectively. If you're having mana trouble the Seal of Wisdom one is helpful, but -5% mana doesn't scale at all. +5% healing does, so that one is better over the long run.
Minor glyphs are purely preference. I do recommend the Blessing of Wisdom glyph, which increases the duration of said blessing by 20 minutes when you cast it on yourself-- in other words it makes it last as long as a greater blessing. This is useful in situations where you're running with a non-Holy pally, because if you don't have Kings you'll probably be the one blessing Might and Wisdom. It lets you do Greater Might for the other paladin, then a regular Wisdom on yourself that will last just as long. Less hassle, less having to remember to re-bless yourself every ten minutes, more \o/.

Out of curiosity, what level is your Paladin nowadays?
(I ask 'cause I'm like, antsy for healers to help further getting THM off the ground. XD That's just the ulterior motive side, though)

As an alternative to Glyph of Flash of Light, Glyph of Lay on Hands is pretty sweet IF YOU REMEMBER TO USE IT. I don't, so I use Glyph of FoL.
Otherwise, 'Renna has the basics pretty well covered, at least in terms of mechanics.
In terms of actual healing... that's a treatise I"ll have to tackle sometime other than in the middle of a move, but I can suggest checking out Siha's stuff over at www.bananashoulders.com - she's awesome, an Aussie, and a kickass holy pally. Also, a very nice person.
Otherwise, 'Renna has the basics pretty well covered, at least in terms of mechanics.
